Foxtail Millet Pongal (Thinai Pongal)
A wholesome diabetes-friendly breakfast — native millets replace white rice for slow, steady energy.
Ingredients
- 1 cup Foxtail Millet (washed)
- ¼ cup Moong Dal
- 4 cups water
- 1 tsp Cumin Seeds
- 8-10 whole Peppercorns
- 2 tbsp cold-pressed Sesame Oil or ghee
- Fresh Curry Leaves, Ginger, Salt to taste
Method
Dry-roast the moong dal till lightly aromatic. Pressure-cook the millet + dal + water with salt for 3 whistles. In a small pan, heat the oil and splutter cumin, crushed pepper, ginger and curry leaves. Pour this tempering over the cooked pongal and stir gently. Serve hot with coconut chutney.
Sesame Oil Rasam (Gingelly Rasam)
A traditional digestive sipper — cold-pressed gingelly oil makes this rasam aromatic and gentle on the stomach.
Ingredients
- 1 small tomato, chopped
- ½ tsp tamarind paste
- 1 tbsp Rasam Powder
- 1 tbsp cold-pressed Sesame Oil
- ½ tsp Mustard Seeds
- ¼ tsp Cumin
- Curry leaves, 2 crushed garlic, fresh coriander, salt
Method
Boil tomato + tamarind water + rasam powder + salt for 5-7 minutes. In another pan, heat the sesame oil and crackle mustard, cumin, garlic and curry leaves. Pour the tempering over the rasam, finish with fresh coriander. Serve hot with rice or as a warm sipping soup.
Golden Turmeric Milk (Manjal Paal)
A traditional warm bedtime drink — calming, immunity-supportive, gentle on the system.
Ingredients
- 1 cup warm milk (cow or plant-based)
- ½ tsp Organic Turmeric Powder
- Pinch of black pepper
- 1 tsp Raw Forest Honey (add only when warm, not hot)
- Optional: pinch of cardamom
Method
Warm the milk on low heat, whisk in turmeric and a pinch of pepper. Simmer 3 minutes. Take off heat and let it cool slightly. Stir in honey at the end (never add honey to hot liquid). Sip warm before bed.
Ragi Mudde (Finger Millet Ball)
A South Karnataka and Tamil staple — packed with calcium, energizing and naturally cooling.
Ingredients
- 1 cup Ragi (Finger Millet) Flour
- 3 cups water
- ½ tsp salt
- Optional: 2 tsp ghee
Method
Boil the water with salt. Slowly sprinkle in the ragi flour while stirring continuously so no lumps form. Cook on low heat for 5-7 minutes till thick. With wet hands, press into smooth round balls. Serve hot with sambar, rasam or natu kozhi (country chicken) curry.
